As an Asian person who's eaten lots of sushi and Japanese food, this is maybe a 2.5 star restaurant. If I had no prior/limited exposure to Asian food, I'd *maybe* give it a 4 star. Service is a bit slow (time between things being served was definitely dragged out; it was a Saturday night) but overall fine and pleasant but the food... sake sashimi is always hit or miss. My husband ordered one serving (2 pieces) and one piece was stringy and hard to chew, the other one was smooth and silky as expected. I ordered their beef udon noodle and it was just terrible. The only redeeming factor was the noodles had a good texture. The "veggies" that came with the udon consisted of one large barely-cooked floret of broccoli, 2 bites of over-cooked cabbage, and 2 slivers of onion. Lots of beef but they did not clean the broth so there were lots of bits of beef fat/blood floating all over the top, which is incredibly unappetizing and a testament to the little care they give to their cooking methods. The beef had no other flavor other than whatever the broth tasted like, which was just one-note: salty. And the beef was just well-done beef chunks inconsistently sized cooked in the broth. Made the broth overly beef-y tasting. Another annoying thing about their menu options is the number of rolls with cream cheese and/or jalapeno peppers. Those are not traditional Japanese fillings, which is fine, but to have those ingredients in nearly every roll on their menu is maddening. Also, why does this place use disposable chopsticks yet have cloth napkins?? You are an Asian restaurant: Please get some real chopsticks. I brought my own chopsticks to avoid the disposable bamboo ones that are heavily bleached and splinter-y and simply wasteful. Bottom line: you can get better quality sushi at King Soopers.

Arrived with a group of 3, found it strange they served us 2 waters (1 with no ice, the other full if ice). Anyhow, drink order was dropped, had to ask a second time. The Tsunami ($8) was so heavy, not refreshing one bit, it was undrinkable.

We were repeatedly told sorry about the wait, sure it was Saturday night but it got worse from there. Two in my party ordered standard menu options while I order off the sushi menu. The food off the standard menu arrived but no sushi, by the time the other attendees in my group had finished their meals, I asked if the could cancel the sushi order, guess not so I had it boxed up. Was not offered any sort of compensation, so I begrudgingly paid the tab and sprinted for the door.

Suehiro continues it slide into mediocrity.

I work down the street from restaurant and eat here about once a week. The sushi is always super fresh (not once have I had a bad cut), and the staff is very attentive. Mick and Matt's chef's creation rolls are absurdly good, and they are great guys to talk to at the sushi bar; highly recommend.

We sat at the sushi bar and had a great experience. The sushi chef was very friendly and entertaining. We got a chef's special and it was very good and full of flavor. The miso is excellent as well.

Can you ever go back home?. Disclaimer: I cut my sushi chops at the hard-to-find Old Town Fort Collins joint. This is where I fell in love with the Buddha Roll, the Jeff Roll and lightly wonderful cucumber salad. But can you go back to your first love? I have had sushi everywhere in the world and this is the blue ribbon, the benchmark. In its first evolution, it was a crowded little place that bent over backwards to serve. Success and investment bought it a larger building which feels strangely impersonal to this Toro-loving guy. But it is hard to overcome good food with any quirks and so Suehiro remains a much recommended local eat. There are others in town but don't bother. Stay on the new Corbett Street location and drink down free refills of Miso soup from heaven.
