As with many upscale sushi restaurants, it can be difficult to get a reservation at Kyubey. You'll need to reserve your seats through a hotel concierge or a Japanese friend.
We arrived ten minutes ahead of our reservation and were guided to a comfortable waiting area upstairs.
When we were seated, Yosuke-san came out to greet us in person and make small talk. He even gave us a copy of a Wall Street Journal article about the restaurant to read. It is apparent how much pride he has in the restaurant and it made me really excited for my meal.
Our chef, Futagawa-san, was very friendly and cheerful. He told us the names of all the different types of fish we were served, in both Japanese and English! He was an attentive and considerate chef who always made sure our needs and preferences were met.
We really enjoyed our meal and will be returning the next time we're in Tokyo.

This review is specifically for lunch. Kubey lunch is comparably cheaper and accessible by walk in without reservation, but quite disappointed because I expected high end but it felt like TGI or Outback steak house in sushi restaurant. The quality was not the high end, but you get what you pay for. In Ginza, at least $10,000 and efforts to make reservation a month in advance guarantees the quality. I'd prefer Tsukiji market rather than Kubey. This Uni sushi shot tells a lot.

What more can I say. Lives up to the hype and if you get the omakase (10,000 yen/person) its actually not as expensive as people think. Its decently priced for the quality and in comparison to similar sushi restaurants in Ginza. If you're a first timer in Tokyo and looking for a traditional, high quality sushi restaurant, I'd recommend coming here as they are very foreigner/tourist friendly.

Excellent sushi. Every piece was melt in your mouth. The chef gave us options to have the shrimp raw or cooked. Of course we had it raw. It was delicious. One thing to note. The fish was kept at room temperature. I personally prefer the slice of fish to be cold and the rice warm. This gives the sushi a better texture. Otherwise the meal was perfect.

Came here for lunch on a weekday. Had to put name down to reserve seats. Thought the experience, both atmosphere and food wise was well worth it. We had the ten piece set menu and found it very filling. Highly recommend
